sounds good chato...
I'm gonna try this one tomorrow night

I make a similar dressing...no measurements, I just wing it
-olive oil,
-mustard (dijon or powdered seed)
-honey(or agave nectar),
-shot of lemon juice (lime works too)
-prepared horseradish(or powdered wasabi),
-salt, pepper, garlic powder
-either red wine vinegar, or balsamic

mix it all up in small container with stick blender...adding the oil last... can make it like vingerette...or add more oil and make it thick

(make mayonaise same way, just use white vinegar and add in an egg and use lots more oil...add or take away any spice, oil, egg, vinegar, little mustard only required ingredients)

if you can find it, agave nectar is nice...very similar to honey but it mixes well even in cold liquids
